Preparation Instructions
- Knead the icing until soft and pliable.
- Roll out on a surface lightly dusted with icing sugar to a thickness of 5mm (1/4 inch).
- Lift and turn the icing to prevent sticking.
- Cover the cake thinly with apricot jam, buttercream, or moistened marzipan.
- Use a rolling pin to lift the icing and drape over the cake.
- Smooth into position from the center to the edges and down the sides.
- Trim excess icing with a sharp knife.
- For an extra smooth surface, polish with a smoother or the flat of your hand.
