Crepe Mix: Egg-Free, Just Add Water

Same ratio for every size: 1.2 ml of water for every 1 g of mix.

• 110g: add 110g of mix to 130ml (just over 1/2 cup) of water and whisk until smooth — makes 5 servings (5 crepes).
• 300g: add 300g of mix to 360ml (1 1/2 cups) of water and whisk until smooth — makes 15 servings (15 crepes).
• 454g: add 454g of mix to 545ml (about 2 1/4 cups) of water and whisk until smooth — makes 22 servings (22 crepes).
• 1250g (foodservice): add 1.25kg of mix to 1500ml of warm water, beat well for 3 minutes until smooth and rest for 20 minutes — makes 20 servings of about 135g batter.
• 25kg (bulk): add 25kg of mix to 30 L of warm water (same ratio as 1250g) — makes about 400 servings of about 135g batter.

Next steps:

1. For best results, let the batter rest for 15 minutes (20 minutes for 1250g).
2. Heat a pan over medium heat and lightly grease with oil or butter.
3. Pour the batter (about 44g per crepe for the retail packs) into the pan and swirl gently to spread evenly.
4. Cook for about 1 minute on each side until lightly golden.
