Pancake Mix

Follow the instructions below based on the size you are preparing:

• 110g:

  Add 110g of mix to 100ml (3/8 cup) of water for 5 servings.

• 275g:

  Add 275g of mix to 200ml (3/4 cup) of water for 19 servings.

• 454g:

  Add 454g of mix to 330ml (1 1/3 cups) of water for 31 pancakes. Small batch: whisk 180g (1 cup) of mix with 125ml (1/2 cup) of water.

• 1250g (foodservice):

  Add 1.25kg of mix to 900ml of warm water. Beat well for 3 minutes until smooth. Makes 43 servings of 50g.

Next steps:

1. Stir until smooth and well combined, then rest for 15 minutes (20 minutes for 1250g).
2. Heat a pan over medium heat and lightly grease with oil or butter.
3. Pour the batter for each pancake: 25g (1/8 cup) for the 454g pack, 50g (1/4 cup) for the other sizes.
4. Cook until bubbles form and the edges begin to dry, then flip and cook for about 1 minute until golden brown.

25kg (bulk): 18 L of warm water (same ratio as 1250g + 900ml). Makes about 860 pancakes of 50g.
