Description

A modern alternative to rattan: a ribbed silicone banneton that collapses flat when you are done. The ribs leave the same decorative rings on the dough, but the silicone is non-stick, washable and does not hold on to flour or moisture, so it needs far less upkeep.

Because it is heat resistant, you can proof the dough and then bake directly in the basket, or turn the loaf out onto a stone or into a Dutch oven. Folded, it is only about 3 cm tall – perfect for small kitchens.
